We pondered the presence of absence and the long-lost Lord Lucan. Alicia had raised the bar and asked guests to cook a meal of disappearance – and make vanishing edible, dishing the invisible. Tricky.
Alex made part of his ingredients disappear – by reduction. Bourbon and soya sauce and sugar and allspice all escaped into the ether. Sinead learned from jamie and hid the veg – making a lasagna that looked and tasted deliciously meaty, but was made of all that nasty green stuff like peas and spinach and broccoli. Someone made a cake with a secret stash of nuts inside it – peanuts and hazelnuts.
Stefan – like Lucan – stashed nannies in sacks – lovely filo parcels, lashed with lucanism and scattered with speech bubbles of each nanny’s protestation
and Alicia served a stealth borscht – beetroot indetectable – and the most glorious pork known to human, slathered in a thick sweet sauce made from Korean blue cheese – a kind of fermented tofu – all served with noodles stewed in invisible green onions.
what does the word and country bring to mind for you?
For starters why not try acarajé – fried balls of shrimp, black-eyed peas, and onions or empadinhas de palmito – small empanadas with a hearts of palm filling. Coxinha are another Brazilian favourite – chicken croquettes made to look like drumsticks.
Feijoada is probably the most famous and traditional of all Brazilian main courses. It’s a black bean stew with smoked meats that takes a long time to prepare so it might be one for making the night before! In the north of the country, seafood dishes predominate and both vatapá – shrimp dish with a cashew peanut sauce and moqueca de peixe – a coconut fish stew, are both delicious and easy to make.
For dessert fruit flavoured flans and cakes are popular whether banana, passion fruit or coconut but my favourite is Bridgardeiros, candy treats named for a famous Brigadier General who loved chocolate.
